Salads

1) TOMATO and CUCUMBER SALAD

INGREDIENTS:
3 tomatoes
1 cucumber
6 green leaves mint
1 tbl chopped parsley
1 small chopped onion or 3 green chopped onions
1 tbl lemon juice
3 tbl olive oil
1/2 tsp vinegar
1/2 green pepper
1/4 tsp sugar
1/4 tsp black pepper
1 minced clove of garlic
1/2 tsp salt

METHOD:
Mash the garlic and salt in a bowl, add lemon juice, olive oil, vinegar, sugar, and black pepper, mixing them well together. Cut the cucumber, tomatoes, green onions and green pepper into bite size pieces. Add the garlic mixture along with the parsley and mint. Mix gently. Serve immediately after you prepare it.


2) CUCUMBER AND YOGURT SALAD

INGREDIENTS:
1 large cucumber or 3 small peeled cucumbers, cut into slices
2 cup plain yogurt
2 cloves of minced garlic
1 tsp dry mint
2 tbl water
1/2 tbl salt

METHOD:
Put yogurt in a bowl and add garlic, salt, and water. Stir it very well, then add the mint and the cucumber and mix it again. Serve cold.


3) FATTOUSH

INGREDIENTS:

1 Romano lettuce (chopped into bit-size)
1 cucumber, sliced
1 large tomato cut into small chunks
1 bunch of radishes, sliced
1 cup fresh mint, stems off
4 green onions chopped with the green ends
1 pocket bread toasted and cut up into bite-sizes
2 minced cloves of garlic
1/4 cup lemon juice
1/2 cup olive oil
1 tsp salt
1/2 tsp pepper
1/4 tsp sumac spice

METHOD:
Put all the above vegetables in a salad bowl and cover it with a plastic wrap and refrigerate. Mix garlic, oil, lemon juice, and spices in a small jar and shake very well then refrigerate. Just before serving, sprinkle toasted pita bread and pour dressing, then mix the salad very well.


4) TABBOULEH (PARSLEY SALAD)

INGREDIENTS:
3 large bunches of parsley, finely chopped
1/2 bunch of fresh mint, finely chopped
4 green onions with green ends finely chopped
3 large tomatoes, cut into very small pieces
2 tsp salt
1 1/2 tbl burghul
3/4 tsp black pepper
1/2 cup lemon juice
1/2 cup olive oil

METHOD:
Place the parsley in a large mixing bowl. Rinse the burghul and drain, then squeeze all the excess water and put it on top of the parsley. Then add the tomatoes, green onions, and the mint. Just before serving, add the salt, black pepper, lemon juice, olive oil over the mixed green vegetables and toss very well. Add more lemon juice or salt to taste
