INGREDIENTS: 1 1/2 cups uncooked lentil 4 cups water 2 large onion, cut into wedges 1/2 cup olive or corn oil 1 cup uncooked rice 1 tbl salt 1/8 tsp allspice 1/4 tsp black pepper METHOD: Rinse lentil and place water in saucepan bringing it to a boil and cook it over medium heat for 15 minutes. Meanwhile, sauté the onion in oil in a pan, until golden brown. Remove the onion from pan and place it aside. Rinse the frying pan with 2 tablespoons of lentil water and add this residue with rice and salt to the lentil. Cook for 20 minutes on low heat until done or until rice and lentil are fluffy. Place on a serving platter and completely, covering the lentil with fried onions. |
