INGREDIENTS: 1 1/2 lb fresh fried okra (see below) 1 lb beef or lamb stew, reserve the broth (see below) 1 small chopped onion 3 cloves of chopped garlic 1 bunch chopped cilantro 1 12 oz can tomato sauce 2 tbl lemon juice 1 tsp grenadine molasses 1/4 tsp cinnamon, allspice and nutmeg 1 tsp salt 3 tbl butter METHOD: a) The Okra - Rinse the fresh okra and cut stems, then dry it. Fry okra in corn oil until lightly browned. b) The stew - 2 lbs lean beef or lamb 1 tsp salt 1/2 tsp nutmeg, cinnamon, allspice, black & white pepper 2 bay leaves 1/2 small onion, peeled, and cut in half Cut the meat into big cubes and put in a medium caldron. Pour cold water over it and put on stove under high heat. When the skim appears, take it off with a spoon and throw it out. Add the rest of the spices and the onion. Place it over medium heat and cook for 30-40 minutes (until meet is tender). c) The Meal - In a saucepan, sauté the onion in butter, then add garlic, stir until yellow color and add cilantro, and the meat. Stir, then add tomato sauce, lemon juice, grenadine, 2 cups of broth and all the spices and salt. Lower the heat and cover while it simmers for 10 minutes. Serve it hot with fluffy rice.
