INGREDIENTS: 1 amount of dough recipe (cover with a towel for 2 hours let it rise, then use) Dough: 5 cups of flour 1 egg 1/2 cup corn oil 1 tbl dry yeast or 1 pkg 1/4 oz. 1/2 tsp sugar 1 tsp salt 1 cup lukewarm water 1/2 cup lukewarm milk Dissolve the yeast, and sugar with 1/2 cup warm water and let it stand for 1 minute. Place the flour and salt in a bowl making a depression in the center. Add warm milk, oil, egg and dissolved yeast with the remaining warm water. Begin mixing flour with the liquid making sure all batter on sides of the bowl is worked into the dough. (Hands may be occasionally dipped in water while kneading to give a smooth dough) Ingredients for filling: 2 bunches of spinach, rinsed well and drained thoroughly, then finely chopped 1 tbl salt, and sumac spice 1/2 cup olive oil 1/4 cup lemon juice 1/2 tsp chilly hot pepper METHOD: Mix chopped spinach, chopped onion and seasoning then add oil and lemon juice. Cut the dough into small pieces as big as a walnut and take each ball of dough and lightly flour it and roll it out into a 1/4" thick circle on a board with a rolling pin. Place a heaping tbl of the filling on the circle and close it from all the edges thus forming a shape of a triangle. Oil a cookie sheet with corn oil and place all spinach dough and bake them at 450 degrees for 10-15 minutes minutes then broil them until golden in color.
