"Roasted Fish"

INGREDIENTS:
4-5 lbs whole Rock Cod fish
5 cloves of minced garlic
1 bunch of chopped cilantro
1 small chopped onion
1 tsp salt
1/4 tsp of allspice, hot red pepper, black & white pepper
1 lemon, cut into 8 slices
3 tbl. olive or corn oil
1 tbl chopped parsley
Parsley and lemon wedges for garnish are optional

METHOD:
Clean, scale and wash the fish. Add salt to inside and outside, then let it stand for 1 hour. Combine the rest of the ingredients except for the lemon and oil, and mix well, then stuff the fish with this mixture. With a sharp knife, incise the fish in three parts on both sides and put in each incised part, a piece of lemon and 2 pieces of lemon inside the fish with the mixture. Place the fish in an oiled baking tray, brush the fish with oil and broil on a grill or in the oven for 15-20 minutes on each side or until done. Garnish with parsley and lemon and serve hot or cold. Serves 6.
