"Kaftah Biltahini (Ground Beef with Tahini)"

INGREDIENTS:
1 1/2 amount of Kaftah (see below)
2 tbl of margarine
2 tbl pine nuts

TAHINI SAUCE
5 tbl tahini
4 tbl lemon juice
5 cups water
1 tbl salt
1/2 tsp cinnamon & black pepper

KAFTAH
1 1/2 lb ground beef
1 small minced onion
1/2 bunch finely chopped parsley without the stems
1 tbl soft bread crumbs
1 tbl salt
1/2 tsp cinnamon, nutmeg, allspice, black and white pepper
2 tbl cold water

Mix all the ingredients with water until they're combined well and you have Kaftah dough.

METHOD:
Combine kafta with pine nuts, spread it in a Pyrex (9 x 12) greased with 2 tbl of margarine. With your fingers press until the meat is evenly spread on the tray 1" thick. Then with the edge of your fingers trace a design on the meat as circles. Bake it at 400 degrees for 15 minutes then broil for 5 minutes or until golden.

Prepare the sauce by mixing the tahini, salt and 1/2 cup water in a big bowl and stir it well. Then little by little, add lemon juice and water until they finish, add the spices and pour the sauce on the meat and bake it for 5 minutes at 400 degrees. Turn the oven off and keep the tray for 10-15 minutes longer, the sauce should thicken. Serve it hot or cold with pitta bread for dipping into the sauce with the meat.
